The Ruby Hotel, Round Rock’s first downtown boutique hotel and craft cocktail bar, is seeking an experienced and passionate Food & Beverage Manager to lead its distinctive bar and small-plates dining program. Known for its elevated guest experience and locally inspired offerings, The Ruby is looking for a dynamic professional with a proven track record in casual dining, craft cocktails, and wine program management.

This is a hands-on leadership role ideal for someone with a minimum of 3 years of management experience in food and beverage operations, particularly within boutique hospitality or upscale casual dining environments.


Position Overview:

The Food & Beverage Manager is responsible for the overall execution and success of the hotel's food and beverage operations. This includes managing day-to-day service, maintaining high-quality guest experiences, overseeing staff performance, and driving financial outcomes. You will play a key role in maintaining The Ruby’s reputation for exceptional service and creative culinary offerings.


Key Responsibilities:

Operational Leadership

  • Oversee all F&B operations, ensuring a seamless guest experience across bar and food service.

  • Maintain high standards for food and beverage presentation and service.

  • Ensure adherence to all company standards, health codes, and safety regulations.

  • Lead by example through active presence on the floor and interaction with guests and staff.

Staff Management

  • Hire, train, supervise, and mentor front-of-house and back-of-house F&B staff.

  • Manage daily shift operations and maintain appropriate staffing levels to meet service and financial goals.

  • Develop schedules via Paylocity with at least 10 days of visibility for staff.

  • Approve or deny time-off requests with business needs in mind.

  • Conduct regular staff training, coaching, and performance reviews.

  • Enforce disciplinary procedures when necessary.

Financial Oversight

  • Responsible for P&L management with a focus on labor control and cost of goods sold.

  • Monitor and track weekly expenditures, labor costs, and inventory levels.

  • Manage biweekly payroll approvals and maintain accurate tip distribution records.

  • Complete monthly inventory using the hotel inventory sheet and submit reports by the 2nd of each month.

Quality Control & Compliance

  • Maintain a proactive “inspect what you expect” approach.

  • Conduct regular spot-checks, random audits, and service quality assessments.

  • Implement and oversee detailed opening, closing, and deep-cleaning checklists using the Whistle App.

  • Audit cleanliness and organization of all F&B areas weekly.

Menu Development & Execution

  • Collaborate with AlexaMGMT  to develop seasonal, locally inspired menus aligned with current industry trends.

  • Ensure consistency and quality in food and drink preparation, following company-approved standards.

Event Management

  • Act as the lead for on-site event execution, ensuring all elements run smoothly.

  • Attend weekly BEO meetings and staff events accordingly.

  • Assist in the booking process, manage vendor relationships, and oversee event setup.

  • Maintain communication with event clients throughout execution to ensure satisfaction.

Guest Engagement & Service Recovery

  • Monitor guest feedback and address concerns promptly and professionally.

  • Communicate guest reviews to staff and use feedback for continuous improvement.

  • Respond to service-related inquiries in coordination with the customer service department.

Other Duties

  • Perform hourly operational roles as needed during high-volume periods.

  • Support the Director of Operations and executive leadership with additional projects or duties as assigned.


Qualifications:

  • Minimum 3 years experience in food and beverage management.

  • Strong background in craft cocktails, wine, events and casual dining service.

  • Experience with inventory control, labor scheduling, and cost management.

  • Excellent leadership, communication, and customer service skills.

  • Must be able to work nights, weekends, and holidays as needed.

  • TABC and Food Handler’s certification (or willingness to obtain).
