The Role:

As the Traveling Sushi Chef, you will be responsible for supporting the region’s sushi concepts, preparing different types of sushi such as nigiri and maki rolls. You will also manage the ingredients handling and preparation. It is crucial that you maintain a deep understanding of which ingredients taste well together. Success in this role will be demonstrated by your ability to travel, adapt to various situations, thrive in a fast-paced environment, and embody a servant leader mentality.

  • Hands-On Leadership: Commitment to supporting your team especially during peak times.
  • Oversee the Business: Collaborate with the GM and leaders from the Home Office to maximize kitchen operations. Ensure quality control, inventory management, and adhere to health and safety standards. Play a pivotal role in managing labor, budgets, forecasts, and ensure the bottom line meets pre-determined expectations.

Requirements for Success:

  • 2+ years of successfully running a high-volume and upscale food focused kitchen, preferred background in elevated Japanese cuisine 
  • Hands-on, working side by side with your team during prep and service.
  • Compassion for people and embrace IRHG core values
  • Strong problem resolution skills and ability to proactively set the team up for success
  • Have exceptional organizational skills and a keen eye for detail
  • Experience with managing restaurant financials, mainly dealing with food costs and labor.
