You will play a lead role in Banquets by leaving your mark on each menu and every plate. You’ll work closely with a team of inspiring professionals and mentor aspiring culinarians, setting the standard for creative cooking techniques, crafting quality menus and driving topline and customer growth.

WHAT YOU WILL DO IN THIS ROLE:

 

Operations

  • Create menu items and custom menus upon request
  • Guide menu purchasing and specifications 
  • Manage food, labor, and consumable costs
  • Lead Banquet team with new cooking techniques
  • Supervise the setup and breakdown of food service areas for events
  • Prepare food for all Banquet functions including plated dinners, buffets, receptions, and action stations
  • Lead all aspects of Banquet culinary production from planning to execution

 

Quality and Safety

  • Recognize superior quality products, presentations, and flavor
  • Maintain a commitment to the quality of food products to ensure that safety standards are met
  • Lead compliance and associate adherence in food handling and sanitation standards and certifications

 

Talent Management

  • Thoughtfully engage your direct reports through the performance management process
  • Assist in the coaching and development of Banquet culinary staff
  • Ensure a high-engagement team and collaborative, collegial culture by supporting an open-door environment
  • Guide the growth and development of your team to support both business objectives and personal career progression of those you manage
  • Actively participates in the hiring process to identify the right talent to support the outlet’s concept
  • Demonstrates honesty/integrity and models’ appropriate behaviors in leading by example and serving as a role model

 

YOUR EXPERIENCE:

 

  • High school diploma or GED + 4 years’ progressive experience in the restaurant / hotel industry
  • Must be able to communicate clearly in English, both verbal and written
  • Must possess the ability to quickly and authoritatively delegate job tasks to a large staff 
  • They must also be able to draw upon their considerable experience as a culinary chef who has worked in many different roles and settings in order to effectively coach and mentor junior chefs
  • Be able to work in a standing position a minimum of 8 hours a day
  • Be able to reach, bend and frequently lift up to 50 pounds

 

-Preferred-

  • 2-year degree from an accredited organization in Culinary Arts, Hotel and Restaurant Management, or related major
