About the Role:

To plan, organize and direct all Food and Beverage and Rooms Division purchasing functions of the Hotel.  Has a strong eye for forecasting and budget planning. Performs functions while being able to multitask and assign team goals. To ensure that the highest quality product is purchased at the best possible price while adhering to corporate policies and scheduling demands.  Reviews vendor contracts & programs under the direction of the General Manager.  Coordinates with culinary department to research & participate in menu development.

 

Essential Functions:

  • Obtains bids from vendors, according to specifications.  Determines the best possible price for desired items and places orders of non-food items. Schedules deliveries of items to meet the operational needs outlined. 
  • Determines food and beverage requirements for catering menus, orders according to guaranteed attendees. 
  • Manages regional or corporate purchasing programs along with any special arrangements made therein.  Communicates service requests to vendors on behalf of the Food and Beverage Department.
  • Works with the Food and Beverage team to develop new menus and concepts.
  • Monitors the grades and quality of products received to ensure that they meet the Hotel's established standards.  Ensures appropriate levels of inventories are maintained to minimize waste and maximize ratio turnover.
  • Manages, budgets, and forecasts labor and supply accounts.  Creates purchase orders, manages processing of Food and Beverage and Rooms Division purchase orders for payables.
  • Supervises purchasing staff, including interviewing prospective employees for the department.  Trains, coaches, counsels and disciplines to ensure the smooth operation of all aspects of the Purchasing Department.
  • Ensures adherence to all corporate and departmental policies and procedures such as requisition process.

 

Supportive Functions:

In addition to performance of the essential functions, this position may be required to perform a combination of the following supportive functions, at the discretion of the manager based on the particular requirements of the hotel.

 

  • Maintains schedules and vacation planning for the department.
  • Communicates engineering needs or concerns.
  • Performs administrative or other departmental functions, as needed.

 

 

Job Knowledge, Skills, and Abilities:

The individual must possess the following knowledge, skills and abilities and be able to explain and demonstrate that he or she can perform the essential functions of the job, with or without reasonable accommodation, using some other combination of skills and abilities.

  • Must have full knowledge of food, beverage, and printing products.  Knowledge of purchasing & accounting procedures necessary.
  • Considerable knowledge of mathematical skills (addition, subtraction, multiplication and division) necessary to interpret reports and budgets.
  • Ability to read, write, and speak the English language sufficient to complete forms and inventories, read billings and invoices, and communicate with co-workers and purveyors.
  • Ability to apply supervisory skills to plan, organize, direct employees, coach, train and discipline, as necessary.

 

Qualifications:

Education:

Any combination of education, training or experience that provides the required knowledge, skills and abilities, preferably in Food & Beverage, Hospitality, and/ or Culinary Arts.  College diploma required.

Experience:

Five years of purchasing, inventory, food & Beverage, or Culinary Arts experience at a similar volume hotel.  Two years of supervisory experience required, preferably in purchasing.

Licenses and Certificates:

Ability to obtain any government licenses or certificates. First Aid training preferred.
