Overview of the Concepts: 

Over the past year, Garrett Harker and ES Hospitality have been busy opening several exciting hospitality venues just steps from Kenmore Square and Fenway Park. Among these is the return of Eastern Standard Kitchen and Drinks, the craft cocktail bar, Equal Measure and the group’s newest concept, Standard Italian. Best known for Eastern Standard, Island Creek Oyster Bar and The Hawthorne, Garrett is once again bringing enlightened hospitality and high energy operations to the Fenway neighborhood. Garrett is joined by Beverage Director Jackson Cannon and Culinary Director Brian Rae in the operation of these concepts.

About the Position:

Eastern Standard is seeking an experienced baker to round out it’s Bakery and Pastry Department. Are you excited by fresh milled flour? Does thinking about fermentation keep you up at night? Are you versed in classic baking techniques? Do you have experience making fresh pasta? Do you thrive in a high volume, fast-paced environment? Can you communicate effectively and thoughtfully with fellow co-workers? If this sounds like you, we want to chat!

Responsibilities: 

• Prepare, produce, and bake artisan breads, enriched rolls, and viennoiserie.

• Set time and speed controls for mixing machines, or blending machines, so that ingredients will be mixed or cooked according to instructions.

• Accurately measure or weigh flour or other ingredients to prepare batters, doughs, fillings, and pastry creams, using scales or graduated containers.

• Prepare garnishes as needed for baked goods.

• Maintain adequate supply of all prepared products on hand and ensure proper storage and refrigeration.

• Keeps food waste to a minimum by ordering and utilizing proper quantities and rotating products.

• Properly clean, break down, and store all baking equipment including: ovens, mixers, proofer, floors, freezer, and refrigerators.

• Assist in pasta making as needed.
